It’s haunting me.
Yes.
I said it.
I can’t get it out of my mind.
The ice is perfectly melted.
The coffee is exactly the right color.
I can taste this coffee.
And I want this coffee.
Now … you should know … I didn’t take this picture.
I didn't make this coffee ... Yet.

I don’t have any of this coffee on hand in my house.
I believe this is the plain Perfect Iced Coffee ... but the Pioneer Woman has a mean streak and has included a recipe for Thai Iced Coffee ... and that's what I imagine when I see this photo.
And I know for sure there’s nowhere in Bozeman to actually purchase a coffee that tastes the way I imagine this one to taste.
So when I was at the store yesterday I went crazy and bought these:
Because by golly, I’m going to make the Thai Iced version of this coffee before the weekend is over or so help someone. And I might like it so much I make a lot of this coffee (which only calls for 2 or 3 tablespoons of sweetened condensed milk).
Now I just need to get the coffee grounds.
Rockford Coffee Roaster, here I come! (Rockford roasts the best coffee I've ever had ... and I'm not kidding about this ... it's better than coffee I've had in New York, Los Angeles, London ... way better ... like even if you don't like coffee, there's a good chance you'd like this coffee.)
Other tasty treats on the menu for this holiday weekend, because I’ve decided that the way I’m going to celebrate Independence is indulging in all of the cravings I’ve been having:
Tres Leches cake – I made this version about 18 months ago and haven’t stopped thinking about it. Maybe I’ll even add some blueberries and strawberries to the top to make this Mexican favorite a little more patriotic.
Homemade Ginger Ale from Homemade Ginger Syrup – because who doesn’t like to make their own spicy goodness, and this looks just a little too easy to pass up.
Marinated Portobello Mushroom “Burgers.”
And a vinegar-based coleslaw with a nice kick.
Then … for the carnivores at our party, there are sure to be burgers and dogs … maybe some carne asada because that’s a specialty of the Cowboy’s (and it’s some of the LO’s favorite food in the world).
