012011. I made soup yesterday.
Corn Chowder.
And I am proud to say ... it was pretty darn delish.
But unlike every other blog I've ever read (and I have a long list of cooking blogs I turn to all the time ... like the pioneer woman ... or the smitten kitchen ... or organic spark ... so so many ... too many to list, actually) ...
but unlike any of the aforementioned bloggers ... I didn't take any pictures.
Not because I don't have a camera.
Or a cell phone.
I even have the Cowboy's camera (he left it behind ... and it's a much better camera than mine).
So like I said ... no excuse.
But that doesn't mean I shouldn't share the goodness ...
Because it was good.
Sweet, savory, warm and almost exotic.
Good enough that I have to share the recipe (adapted from the Organic Baby & Toddler Cookbook by Lizzie Vann).
Yes ... it's a recipe from a book intended to make food for babies and toddlers ... but it's adaptable ... and there are some tasty ideas in this book ...
The differences between my version and Lizzies? I used olive oil AND butter. I used a sweet potato instead of a regular potato. I added cardamom. I used coconut milk instead of milk and cream. I added salt and pepper. And I used a lot more of each of the ingredients than in the original recipe because I was cooking for adults ... not to make 6 child-sized servings.
So here you go ... CORN CHOWDER ... hearty, warm, a tiny bit exotic and the perfect meal for a snowy 18-degree day:
1 tsp. extra virgin olive oil
1 tsp. butter
1 leek (chopped)
1 red pepper (chopped)
1 large sweet potato (chopped)
4 carrots (chopped)
2 c. of corn (fresh or frozen)
1 can of coconut milk
1 bay leaf
½ tsp. ground cardamom
Salt (to taste)
Pepper (to taste)
In a saucepan, heat olive oil and butter. Sauté chopped leek and red pepper until soft (about 5 min). Add the coconut milk, corn, potato, cardamom and bay leaf. Bring to a boil. Add a dash of salt and pepper.
Reduce the heat and simmer until the potato is tender (about 15 minutes). Remove the bay leaf. Blend briefly with a wand blender.
YUMMM!!
Q: Are you a recipe adaptor? Or do you follow the word to a "T?" What's on your dinner table these days?
I have to follow it word for word! At least the first few times I make something. Premature recipe adaptation, for me, usually spells disaster, LOL!
