031912. Maybe because it's Monday?
Or perhaps because tomorrow is the first day of Spring?
Maybe we were just too excited these past few days celebrating the new compost bin...
(which was built by the LO and The Cowboy ... who I am very happy to have home for a few months!)
Regardless ... we woke up this morning to a wondrous Winter gift.
That's our backyard.
Covered in more than a foot of snow.
So instead of marking our garden today, we're digging out. (Actually ... the Cowboy is digging out. The LO, the OLO and I are figuring out stuff to do inside.)
Like transplanting our tomato seedlings into larger cowpots.

And scouring our cookbooks for tonight's Cookbook Experiment.
We're deciding between Rachael Ray's Eggplant Stew over Honey and Golden Raisin Polenta and Mark Bittman's Mung Bean Soup.
I'm leaning toward the eggplant ... even though it means I have to bundle up and trek to the market for a few ingredients ... Did I mention there's a foot of snow? (Hmmm ... I get warm just thinking about honey polenta.)
But the recipe calls for canned tomatoes.
And we just don't do canned tomatoes anymore.
Not since I read on Organic Authority about the "7 foods you should never eat." Canned tomatoes are on the list because BPAs are used in the canning process, and the high acidity of tomatoes causes the resin to break down and leach into the fruit.
And the thing about BPAs, you ask? Well ... according to the NIH and the Organic Authority,
"It can disrupt the endocrine system and cause a variety of problems, like chromosomal and reproductive system abnormalities, impaired brain and neurological functions, cancer, cardiovascular system damage, adult-onset diabetes, early puberty, obesity and resistance to chemotherapy."
So ... no canned tomatoes.
Which adds a few steps to the recipe.
But it might be worth it.
